The recipe is taken from jocooks. I halved the recipe and produced 17 soft and delicious buns that are good for breakfast and tea-break.
Ingredients:
- 325g all-purpose flour, sifted, plus extra for kneading
- 50g cake flour, sifted
- 4g instant dry yeast
- 1/4 tsp salt
- 25g white sugar
- 240 ml milk, lukewarm
- 1 1/2 eggs (reserve the remaining half for egg wash later)
- 1 tsp vanilla extract
- 50 ml vegetable oil
- 1/2 cup apricot marmalade (I used no-added sugar version)
- 25g melted butter (for brushing the baking pan, the buns before baking, and the freshly baked buns when they are out of the oven)
Directions:
- Combine all the dry ingredients together (flour, cake flour, instant dry yeast, sugar, and salt). Add the lukewarm milk, eggs, vanilla extract and vegetable oil. Mix well and knead it into a smooth dough by hand (or you can use your mixer but the kneading by hand is the part that I enjoyed most in bread-making) until the dough is smooth and only a little bit sticky. You will need to add more flour until you get to this stage. Place the dough in an oiled bowl and leave it in a warm place to let the dough rise till double in size, about an hour or longer.
- Punch down the dough and roll out on a floured work surface to a big rectangle about 15cm by 20cm big, and 1 cm in thickness. Using a pizza cutter, cut the dough into 7 cm x 7 cm squares. I managed to get 17 squares.
- Make a small indentation in the centre of each square with your fingers. Spoon 1 tsp of the apricot marmalade in the center. Carefully fold each square in half and pinch the ends together. The dough should be sticky enough so that it sticks together to prevent the fillings from leaking out during baking.
- Repeat Step 3 for the rest of the squares. Place the buns onto a buttered pan and brush the sides of the buns with butter to prevent them from sticking together.
- Brush the buns with egg wash, and let them rest for an additional 20 minutes. They will rise a bit more.
- Bake the buns in preheated oven at 175 degree C for 25 minutes or until nice and golden brown.
- Remove from oven and brush the top with melted butter. Let them cool on the rack.
